【The basic five rule on the cooking by the microwave oven】

Though the microwave oven is a very useful cooking utensil, as its principle on heating is different from the gas range table in which the fire is used, if confusing two of them, we are apt to fail cook.

I’ve expressed the book on cooking by the microwave oven, and the author said she was going to show us the readers its basic five rules. They are important points which are common every cooking, so we should master them, and we cook fast, easy and delicious dish, she said like that.

The microwave oven is a very useful instrument, but the principle on heating is different from the gas cooker in which we use the fire, so if confused both of them, we are apt to fail then.

So the author said she was going to show the readers five basic rules so as to use it at will. They are common to all the dishes and are important, so let’s master it, and we can cook fast, easily, and delicious dishes.

Heating the foodstuff from the lower part in the gas cooker. It’s expressed 下火 in Japanese, and when cooking in the microwave oven, heating from the upper part with the electromagnetic wave, we call it 上火 in Japanese, so putting the one which is hard to cook like something hard and other which has little water on the top. It’s a rule.

For example, as to a leaf vegetable, the leaf is at the lower part, and the stalk is at the upper part. As to the meat and fish, the meat has little water and is hard to cook, so the meat is …

When using the microwave oven, we are apt to put the foodstuff on the center of the turn table, aren’t we? But actually this place is the hardest one which is heated, so putting the foodstuff along the turn table as if it were a doughnut is important. Or when lining up the ingredients on the fireproof dish, without putting on any gradient at the center of it and taking up the space, it prevents the foodstuff from heating inconsistency.

When heating with the microwave oven, this way of wrapping is almighty. Foodstuff contains the water and the microwave oven makes the water shake rapidly, and change the water into the vapor of which cubic volume is one thousand seven hundredth times as much as the water, and boils and bake the foodstuff.

Without making the escape way for the vapor, there is a fear that the wrap bursts when heating, so making a space in which one finger is able to put both end of the tableware and heat with the microwave oven is good.
